Lactose free Cherry Scones

Hi guys!

Even though we can try to eat healthy, it’s nice to treat yourself every now and then, isn’t it?! So today I bring this little blog a lactose free recipe that I’ve tried and tested.

Cherry Scones!!!

Now don’t worry if you don’t like cherries, you can literally put whatever you like in this recipe! It’s not too sweet so you would easily be able to make savoury scones if your feeling adventurous.

So what you will need is;

  • 350g Self Raising Flour
  • 1tsp Baking Powder
  • 85g of Butter (I used dairy free Vitalite)
  • 3 tbsp Sugar
  • 175ml Milk (I used Lactofree)
  • 1tsp Vanilla Extract
  • 2tbsp Lemon Juice
  • Milk (to glaze)
  • 85g Cherries (or whatever you want to put in)

Heat your oven to Gas Mark 6 and leave the ungreased baking trays in so they get nice and hot. In a large bowl add the Self Raising Flour and the Baking Powder together. Then rub in the Butter until they look like fine breadcrumbs. Once you have done this, mix in the Sugar.

Now in a measuring jug (I used a glass one) heat up the milk in the microwave (around 1 minute should do), then add the Lemon Juice and Vanilla Extract. Going back to your big bowl, make a well and add your milk mixture to it. Quickly combine everything together so that it all just to say stays together in a big lump/ bowl. Then tip onto your work surface.

Sprinkle abit of flour over the top on fold together 2 or 3 times. The recipe that I followed never told me when to put the cherries in so i quickly folded them into the mixture here (Killing two birds with one stone).

  • A little tip – Don’t over work your mixture, it doesn’t have to look perfect! The more you work it the heavier the scones will be when they have cooked.

Roll out the mixture till it is around 4cm high or until you think the height is ok (Don’t forget they rise when they cook!). Then take a circular cutter (Whatever size you want) and just start cutting away!

  • Another tip – If you don’t have a cutter, just grease a cup or glass with a little more butter. It does just the same job!

Now once you have used all of your dough (The last bit i just rolled in my hand a squished it down a little bit), take your baking trays out of the over and place your scones on them (they spread a little bit). Quickly brush some milk over the top of the scones and place into the oven for 10-15 minutes. Once your scones are nice and brown leave them to cool down on a wire rack, either still on the tray or off it is entirely up to you.

I had no self control and ate one when they where still steaming hot!

Once they have cooled down enough, enjoy! Share them out or just keep them to yourself! The best part about these is that you can’t even tell that they are lactose free!
